Lavender Bees Knees

At our apartment complex there is a big lavender bush that smells as good as it looks. Though we certainly love the smell of lavender, in cooking and cocktails it can definitely go from 0 to soapy quite quickly. We think we found the solution - combine the lavender flavors with honey!! This totally makes sense as the aforementioned lavender bush is usually full of bees, so wildflower honey likely contains some lavender pollen. We whipped up a lavender honey syrup, worked it into a bees knees, and presto: we have ourselves a banger. In this spec we went a little heavier with the syrup but honestly love where it takes the drink.

Ingredients

  • 1.5oz London dry gin - we used @beefeatergin

  • 0.75oz lavender honey syrup (recipe below)

  • 0.75oz fresh squeezed lemon juice

  • 2-3 drops orange bitters - we used some turmeric/orange ones from @oaktownspice but Angostura will do

Tools

  • Shaker

  • Hawthorne strainer

  • Mesh strainer

Instruction

  • Add all ingredients to shaker tin with ice. 

  • Shake vigorously until chilled. 

  • Double strain into chilled Nick and Nora glass. 

  • Garnish with lavender flower.

    *Lavender honey syrup*

    • Steep 1tsp of dried lavender flower with 210F water for 5 minutes. 

    • Let this cool off to around 100F. 

    • Mix 1/2 cup of lavender tea and 1/2 cup of wildflower honey together in a stirring glass.

    • Once we’ll combined pour into storage container. 

    • It will keep for up to 2 weeks. 

    • Also this stuff is great in lemonade, soda water, and hot water.
