Palomacid Trip

We were recently turned onto the concept of acidity-adjusted citrus from @highalcoholcontent . His recipes are as creative as they are culinary and we cannot recommend checking out his account more - give him a follow! The concept of acid adjusted citrus is to take citrus juices like orange, pineapple, and grapefruit juices and balance their acidity to be more akin to lemon and lime by adding powdered acids. In the case of this grapefruit juice, we acid adjusted it to be about the same PH as lime juice by using citric and malic acid we bought on Amazon. The process was very easy and the results were mind-blowing! This made batching out a giant version of this drink for a bachelor party much easier than having to juice multiple different pieces of citrus. We're also running the cocktail program for a friend's wedding this weekend so batchability is key!! In terms of the "tie dye" we topped the drink with, more of less it was a fun nod to the trippy nature of acid adjustment. To "color" the drink without adding an additional spirit we used spirulina! Recipe below!

Ingredients

  • 1.5oz Tequila Blanco - we used @espolontequila

  • 1.25oz acid adjusted (to lime strength) grapefruit juice

  • 1oz cinnamon syrup - made using Cocktail Codex recipe

  • 2 dashes Mole bitters - we used @bittermens

  • pinch of salt

  • Club Soda

  • 1/4 tsp spirulina for "tie dye" effect

Tools

  • Shaker

  • Ice Crusher for making Pebble Ice

Instruction

  • Shake all ingredients except spirulina and club soda in shaker tin with crushed ice.

  • Dump into chilled 8oz glass and top with more crushed ice.

  • Finish by putting 1/4 tsp of spirulina on top of drink and pouring a splash of club soda on top.
