Pisco-co Sour
First of all we want to say that this is one of the best drinks we’ve ever made up at home. If you are curious about trying fatwashing THIS IS THE DRINK. With a coconut fat wash on the pisco, we have achieved tropical nirvana. Eggwhite froth and buttery smooth mouthfeel from the fatwash are an incredible contrast to the zesty citrus and refreshing sweet. Ingredients
2oz virgin coconut oil washed Pisco - we used @piscocapurro
1oz fresh squeezed lime juice
0.5oz 1:1 simple syrup
1 egg white
2-3 dashes Angostura bitters - @angosturahouse

Hawthorne strainer
Mesh strainer
Instruction
Add ingredients sans ice into a shaker tin and dry shake vigorously for about 15 seconds.
Add ice and shake until cold.
Double strain into chilled coupe glass.
Garnish with a few drips of angostura bitters.
To fat wash mix ½ cup of microwaved virgin coconut oil with 1 cup of pisco in a jar. Let sit at room temperature 3 hours. Shake regularly. Store in freezer overnight and strain out solidified coconut fat.
