Pomelove

We were recently introduced to Pomelos...wait, what we mean is we recently saw a pomelo at our local supermarket and were shocked by the sheer shape and size of this gigantic yellow fruit!! Upon opening and tasting the fruit of the pomelo we were rewarded with a flavor that was similar to a grapefruit but with a better balance of sweet and bitter. We knew we had to take another stab at a fresh juice Paloma with this fruit and BOY were we happy with the results. To keep things interesting, we added a hint of rosewater and used agave syrup instead of simple syrup. This recipe is nice and easy for anyone out there who is looking for something chill to whip up this weekend. If you don’t have access to rosewater or agave syrup you use simple syrup and drop the rosewater and still have a fantastic cocktail.

Ingredients

  • 2oz Mezcal, we used the @traderjoes brand which is incredibly affordable and tastes quite good, however at only 80 proof this mezcal is not really for sipping, more for mixing 

  • 0.75oz Pomelo juice

  • 0.5oz lime juice

  • 0.75oz agave syrup (you could also sub simple syrup)

  • 1 bar spoon rosewater

  • 1.5oz Club soda (to top)

Tools

  • Shaker

  • Hawthorne strainer

  • Mesh strainer

Instruction

  • Shake all ingredients except club soda with ice

  • Strain into chilled highball glass over fresh ice

  • Top with club soda and garnish with lime wheel, and/or flower.
