Wake Up Call
We’ve seen quite a few cocktails focused on cold brew and coffee and while we love coffee (Andrea is Colombian after all) we wanted to try something different. In the past we’ve explored tea syrups with chamomile, but we wondered what we could do with the earthiness of Yerba Mate. This cocktail attempts to pair earthy elements like Mezcal, Mate and Mole with bright tropical elements like lime and Piña - the result is delicious and invigorating. A cocktail that will caffeinate you while cooling you down. To us, this drink is a perfect early afternoon/evening pick me up, just be careful about drinking it later in the evening, it’s definitely caffeinated!!
Ingredients
1.5oz Mezcal we used @fidencio.spirits
1oz chilled brewed Yerba Mate we used @guayaki
0.75oz Mate syrup - made by boiling equal parts brewed Mate tea + demerara sugar until sugar dissolves, let cool to room temperature before using!
0.75oz fresh squeezed lime juice
0.5oz unsweetened pineapple juice
2-4 dashes mole bitters we used @bittermens Xocolatl Mole

Instructions
Shake all ingredients with cube ice in shaker until sweating
Strain into old fashioned glass over large ice cube.
For garnish we put a pinch of loose leaf Yerba Mate, a dried lime wheel and a sprig of mint. If you do the loose leaf garnish, we recommend using a straw!
