Checkmate
We don’t always do martinis, usually because the flavor is very dry and one dimensional. However, after watching The Queen’s Gambit, we were inspired to try out the show’s signature cocktail - the Gibson. It’s essentially a gin martini served with a cocktail onion instead of an olive. While this change seems subtle, the flavor of the onion creates a unique umami to the drink. We decided to exacerbate this “savoriness” a bit further by split basing the gin with aquavit bringing in some complexity to the usual formula. On top of all that Lo-Fi’s Dry Vermouth is one of a kind, and the botanicals blend phenomenally with the aquavit. The end product is a complex, delicious, and slightly savory martini that is more refined than the usual dirty martini but packs the same boozy punch.
